Ripe stone fruit aromas of peach and nectarine, with notes of ripe mandarin freshly baked brioche, nougat, vanilla and a hint of clove, add to the complexity and interest on the nose. A silky attack with sweet fruit flavours of peach nectarine and clove in the rich textural mid palate and with hints of nougat and vanilla balanced with fine oak and lingering grapefruit citrus finish.
On the nose there are aromas of citrus, as well as honeydew melon and some stone fruit (peach and nectarine). In addition there is a hint of struck match which adds complexity and a flinty minerality. The palate is concentrated with refreshing acidity and a lingering finish.
Floral hints, suggestive of rose petals, intertwine with Turkish delight, spices, oriental musk, incense and candle smoke. It is big-boned and mouth-filling with a smooth, unctuous texture, balanced by a long dry finish.
In this traditional French blend the sauvignon blanc has given a complex range of exotic aromas and flavours suggestive of lychees, paw paw, Turkish musk and passionfruit, backed by hints of gooseberry and dried wild herbs. The Semillon has added complementary lemon and lime flavours and help fill out the midpalate providing weight and depth.
This is a new look at Pinot Noir through a white wine lens. Premium Central Otago Pinot Noir grapes were hand-picked and quickly pressed then fermented as white juice. The result is a fresh and energetic white wine perfect for summer and something a little different. Best to serve chilled. Pale champagne colour with a fruity nose displaying red apple, honeysuckle, and strawberry. The palate is sweetly fruited, fresh and lively, with notes of red apple, melon and a touch of spice.
Rabbit Ranch Pinot Gris, being a mutation of Pinot Noir, revels in the Central Otago conditions that suit Pinot Noir so beautifully - a long slow ripening period is desirable, with cool nights and warm days as the Autumn harvest approaches. The Rabbit Ranch Pinot Gris has a mineral acidity backbone and an off dry finish that gives the wine a delicious structure and refreshing style.
Summer in a glass, dry Provençal style - crushed berries over alpine flower & citrus sorbet. Made from 100% Central Otago Pinot Noir fruit, lightly pressed to extract just enough colour to deliver the provencal-esque pale pink. Fermented dry to allow the delicate Pinot red fruit characters and cool climate minerality to hop across your palate.
The Rabbit Ranch Sauvignon Blanc is a blend of Sauvignon Blanc from their vineyards in the South Island of New Zealand and the Central Otago Rabbit Ranch home block. A cool climate, elegant yet assertive style Sauvignon Blanc, left on the lees for approx 3 months to tone down some of the overt grassy, grapefruit notes and giving a lovely textural boost to the wine.
Fresh and crisp on the palate with a dry finish. The aromas & palate are full of exotic fruits, strawberry and cheery with a hint of spice. The mouth is full and the fruit is persistent and salivating. Serve chilled.
